Pruning

Pruning is a key factor in the quality of the harvest. Too many buds will produce too many grapes and they will not mature well. I proportion my vineyards to a density of 10,000 vines per hectare (4,000 vines per acre) or about one vine per square metre. Each vine is manually pruned. The pruning season runs from mid-November to mid-April. This work has to be done every year.
